Itt egy recept, a neten talaltam, komolynak latszik. Lenyeg, hogy nagyon finomra, az eszpresszonal is finomabbra daralt kave kell, ehhez kell speci szerkentyu.

 

 

Use medium-roast coffee, ground to a powder that is finer than espresso. Most coffee grinders don't grind coffee this fine, so use a Turkish Coffee Grinder (known better here as a Turkish Pepper Mill), or ask your coffee purveyor for Turkish Grind coffee.

Start by adding to the ibrik 1 tsp of ground coffee and 1 tsp of sugar to every 2 oz of water. Bring the mixture to a boil on the stovetop. As the froth rises to the top, just before it boils over, serve the froth. Then repeat the process twice, for a total of three boilings.

Serve in very small cups. (Traditional espresso cups are of an appropriate size.) Allow the coffee grounds to settle to the bottom of the cup, and sip gently, avoiding stirring up the grounds. The result is a magnificent beverage.
